This healthy snack recipe is a delicious spread that even children like. Liquid smoke gives a special flavor, but it can be omitted. Red canned salmon or leftover fresh salmon work the best in this recipe. This recipe is also a good choice for a diabetic menu. Try this as a sandwich spread for a healthy quick meal.
1 tub (12 ounces) fat-free cream cheese
1/2 cup fat-free sour cream
1 tablespoon lemon juice
1 1/2 teaspoons Worcestershire sauce
1 teaspoon liquid smoke*
1/8 teaspoon salt (optional)
1/8 teaspoon ground black pepper
1 can (14.75 ounces) red salmon, drained or 2 cups cooked and flaked fresh salmon
2 tablespoons chopped celery
2 tablespoons chopped green onion
Have cream cheese at room temperature. Blend the first seven ingredients in a mixer.
Remove skin from salmon and mash bones, if using canned. Mix salmon, celery and onion with the cream cheese mixture.
Spread on raw vegetables or whole grain crackers.
*Hickory liquid smoke can be found in the grocery store next to the barbecue sauce.
Note: Optional ingredients are not included in the nutritional analysis.
